I want to learn to bake bread like everyone else during this pandemic. Unforunately, I'm at the age when consuming large quantities of carbs won't do anything good for me.

My favourite Jesus is super jacked Korean Jesus that makes Arnold Schwarzenegger look like a wuss.

Today I cooked about 2 pounds of beef liver on my roasting pan.  I overcooked it a little because I'm not used to meat being that thin, but the flavour was just about right.  Next time it's getting a light bath of Worcestershire to enhance the flavour, but my basic default of salt pepper onion and garlic works for everything.  It was just about perfect.  If I'd left it in another half hour it would be jerky lol



 

LOL yeah I wasn't joking about it, definitely Best Jesus right there hahahaha

Oh mean, yeah.  Hot fresh bread is the greatest, slathered in butter and honey.  I never was a very good baker, since I didn't have the patience and you can't adjust your recipe on the fly very well.  My brother did have a phase where he was making bread all the time, experimenting with his recipe, and he got really good at bread and noodles because of it.  Maybe one of these days I'll try that out, but it's more likely that I'll just buy a bread machine.

I've gotten good enough for the basics: French bread, buttermilk biscuits (can you even call that bread?), and pizza dough. Maybe I'll sign up for that Masterclass on breadmaking...

There was someone on Uncensored insisting that wheat based foods are peasant foods. 

Might be true... but *good* bread and a good hunk of cheese with a glass of water was a favorite meal of mine when I was a kid. Must have some ancestral memory from my family's time in the ghettos of England. :)

Peasant food is invariably the easiest, most nutritious, best for you stuff.  Beef Wellington is a pain in the ass to make and it's not even as good as just normal beef with a nice plain dinner roll.  I'll take a baked potato any day of the week, thanks.

Evidently I'm a Protestant - because - just *reading* "Beef Wellington" made my mouth water for that tender, red-in-the-middle roast soaked in deep gravy. 

Although it is making me wonder what the difference was between "Beef Wellington" and "Post Roast". I think it may have just been the guests my grandmother had invited to dinner, or supper... relatively.

Ah... but still covered in a gravy and pink inside... 

I'm pretty sure the proper English recipes are pretty same in the basics - and assuming my grandmother used the same gravy -ended up tasting similar.

Did you say liver? What's up with that? Do you just like it or did the doc prescribe iron, or what?

I'm not into organ meats yet, despite the reported benefits. Something is bound to throw me over the line eventually.

Liver is a strange meal. It makes your house smell like piss when you're cooking it, and honestly, has a bit of a piss-like odor itself even after cooked. Which is why it is best drenched in a thick, rich meat gravy. 

My mother would cook it several times a year. It is... um... there is a texture to it - like most organs. It is very coarse and grainy and dense for a meat. Heart is similar. I didn't mind it when I was a kid - but it wasn't my favorite. It is almost *gamey* in the sense that it is absolutely a tougher and stronger tasting meat than most people are used to. 

I suppose I still eat things like Kidney Pie - English kind of organ meals that again - rely on a LOT of gravy, potatoes, peas, carrots and little tiny diced pieces of meat. I'm fairly food adventurous compared to most Westerners - but pretty picky compared to Asians and a lot of "ethnic" cultures.
